Hi Jenny, you welcome. For 8-9cup of stock (water made from sausage)which is 2l, you will need 2 cups of “soup starter”- 0,5- 0,6 l. If you buy the starter it is sold in bottles that are size 0,5 l. Love your recipe Polish Mama! I too put dried porcinis in my Żurek - they take most Polish soups to another level! But where you put lemon, I put dijon mustard, and/or ground horseradish. I like my Barszczyk spicy-hot but chilles don't go well with it IMO. Also I whiten my soup in the bowl, at serving time, with either sour cream or kefir and a dab of heavy cream if you're feeling rich :) To those who are new to the soup - if you want it to taste original Polish: use polish pork kiełbasa, smoked bacon and a lot of garlic and majoram. Re: the Gralic: For a family sized pot I use up to a whole head of garlic, in stages: some for the soffritto, some for the stock, and finally: one thoroughly ground clove to finish before serving. PS I dig your technique, but a certain point I thought, frying the sausage was unnecessary - you have the fried Bacon. Too much of the caramelized flavours take over the subtle sour or the fermented flour base imo. rgds

Hi, I am grateful for your kind words. Sometimes it depends on the flour you buy, adding lemon juice or horseradish or more garlic could help. Also keeping it for longer.
I'm from Uruguay. Fell in love with this soup the two times I went to Poland, so now I make it at home. Why not chopping the vegetables before cooking? Isn't it easier?

It is not typical for Krakow, both Barszcz Bialy and Zurek origin from Belarus, and are very common for Slask- Silesian region. I was looking into the typical soups for Krakow, and ... there is Zurek po krakowsku which refers to the soup starter, that is prepared in specific way.
The recipe for sour rye soup in Krakow is in the Archives of the City of Krakow: “ Sour rye soup in Krakow: - three handfuls of rye flour - a quart of water after cooking - small bread called Prądnicki or Krakowski - garlic clove for flavor - a pot of white (wheat) flour Softened everything in a stone pot, Set aside for two nights near the stove (...). The sour rye soup prepared in this way also tastes great when cooked on smoked or sausage, served with mashed potatoes or an egg.”
